Kaju Katli (Cashew nut Fudge, thinly sliced)

 


Kaju Katli

Kaju katli is an all-time favorite, festive treat. I make it every year on Diwali for my family and friends. It's the easiest sweet treat that exudes festive! The best part---it only requires 3 ingredients.

Ingredients

Cashew nuts (powdered) - 2 cup

Sugar (granulated) - 3/4 cup

Water-1/4 cup

Ghee (clarified butter) - 2 tsp

Silver (for garnish)

Recipe

Cashew nut powder

For making cashew nut powder, take the cashew nuts and chill them in the fridge for 10-15 minutes. Remove and then grind in a blender (blendtec, vitamix) to make a fine powder. Sieve the ground cashew powder to remove any chunks

For Sugar Syrup

  • Add water and sugar in a saute pan (preferably nonstick pan) and cook on a stovetop on low heat. Keep stirring to avoid the sugar syrup from burning.
  • Stir the sugar syrup till it forms string consistency (about 5-min)
  • You can check the consistency by placing a drop of the sugar syrup  between your thumb and index finger. A single string should form when you move your finger and thumb apart. Be careful of the hot temperature when performing this test. Tip: first place the drop of sugar syrup on a stainless steel spoon and then touch it.


Fudge

  1. In the same pan as the sugar syrup, add the sieved cashew powder into the sugar syrup.
  2. Mix well, and keep stirring until the mixture starts releasing from the pan.
  3. Once the cashew paste turns into doughy consistency, add ghee.
  4. Remove from stovetop and set aside.
  5. Prepare a baking sheet or a flat tray and grease it with a 1/2 tsp of ghee
  6. Transfer the cashew dough onto the baking sheet
  7. Spread the dough evenly, about 1/2 -inch thickness using a spatula or a flat spoon 
  8. For best results, cover with a silicone mat or parchment paper and roll the dough with a rolling pin to get an even spread.
  9. Once the dough is evenly spread, gently take the silver paper and dab it on top of the dough
  10. Now, cut the dough into 1" pieces (diamond shape) or whichever shape you prefer. Sprinkle saffron strands for decoration.
